People always seem to struggle with breakfast.  I find that I make Bulletproof coffee, and skip breakfast altogether.  However, there are days that I want just a “little something”. This recipe is fantastic, as it is quick and easy.  I often have this as my snack, and not for breakfast at all.

This recipe is especially good when I am trying to eat low carb.  It consists of all nuts and seeds and fibre. All the good stuff.   It is also an excellent choice for a diabetic snack. All in all….this recipe is just plain good!

Beware…and I will put this warning later in the recipe. This makes a lot. What I prefer to do is to mix all the dry ingredients together, and then make it in small batches. Check the recipe to see how I portion it.

It starts with the seeds. So easy…equal portions of all the seeds in the recipe.  Chai, coconut, hemp, flax, almonds, and then topped with psyllium husk. 

Mix it all together into a jar, and it waits anxiously for you in your pantry. When I want a snack, I just pull it out, and dole myself 2 tbsp of it into a bowl.  Add double almond milk or heavy cream. So, if you have 2 tbsp of seeds, you would add 2 tbsp of liquid.

Now the magic begins. Let it sit until it is the consistency you want. I like it thick where I have to chew the mixture. There is something way more satisfying about chewing your snack.

Top it with your favorite nuts and you are off to the races!  This mixture will fill your stomach. The “crunch” in it is extremely satisfying as well.  I know when I am eating low carb, I am constantly looking for snacks which meet the mark.  This one is just …. well … amazing.

  • 2 tbsp chia seeds
  • 2 tbsp unsweetened coconut
  • 2 tbsp hemp hearts
  • 2 tbsp ground flax seed
  • 2 tbsp chopped walnuts or almonds
  • 2 tbsp psyllium husks (optional)
  • 3/4 cup unsweetened vanilla almond milk
  • 2 tbsp heavy cream
  • Swerve or stevia to taste

Note…this makes a big recipe. If you want smaller portions, find the instructions below that says “FOR SMALLER PORTIONS”.

tO MAKE ALL 6 SERVINGS

  • Combine the dry seeds together into a mix.
  • Combine the wet ingredients (almond milk, heavy cream)
  • Mix together and let sit for 5-10 mins until desired consistency is achieved.  Cereal will get thicker the longer it sits.
  • Add Swerve or stevia to taste.

TO MAKE SMALLER INDIVIDUAL SERVINGS

  • Combine the dry seeds together into a mix. Note that you can be creating and add your favorite seeds if you don’t like my combination.
  • Store the seeds in a closed dry container.
  • When ready to make an individual serving, put 2 tbsp of the seed mix into a bowl.
  • Add 3 tbsp of unsweetened almond milk into the seed mix.
  • Add 1 tbsp of heavy cream into the seed mix.
  • Wait for it to thicken to desired consistency.  It will get thicker the longer you leave it sit.
  • Add Swerve or stevia to taste.
